"It's all in the juice!"
Makes 8 Servings
1 Package Ms. Linda's Original New Orleans Ya-Ka-Mein Seasoning (TM)
8 Cups Water
1 Lb Cooked Spaghetti
5 lbs Boiled Boneless Chuck Roast, Cubbed or Shredded*
4 Eggs, Hard Boiled, Peeled & Halved
2 Bunches Green Onions, Chopped
*Or use any meat you want!
Optional Additions: vegetables, shrimp
In a large pot, stir contents of Ms. Linda's Original New Orleans Ya-Ka-Mein Seasoning (TM) package into water and bring to a boil. Simmer for 10 minutes until seasoning is completely dissolved and the juice (NOLA speak for stock!) is a rich, dark color.
Divide the cooked spaghetti into eight equal parts and put in serving bowls. Portion meat into eight equal parts and place on top of spaghetti. Sprinkle green onions on top of meat and place half a hard boiled egg, yolk side up, on top of each bowl.
Ladle one cup of juice into each bowl and season to taste with soy sauce.
Serve with your choice of hot sauce, ketchup or soy sauce.
